Italian Dining Experience in Bingo Casino

The dining delight of Wild Earth is set to return to Potawatomi Bingo Casino!

Often with time, some things change and other elements remain the same.  So it is with the Wild Earth restaurant that used to exist in Potawatomi Bingo Casino.  That restaurant shut its doors temporarily in 2009.  Perhaps the owners thought it was a permanent closure at that moment.  Time has proven otherwise.

 Bingo Kicks into High Gear

Fast forward three short years, and what used to be a Wisconsin restaurant, has metamorphosed into Wild Earth Cucina Italiana.  It will again be a part of the Bingo Casino ambiance; and that fabulous chef Audrey Vanderburgh will still create delicious entrees.  However, Italian cuisine has become the order of the day.

Italian Style Entertainment

Vanderburgh moved on after the closing of Wild Earth.  She has recently served as chef of SPIN Milwaukee in the Third Ward.  Vanderburgh is now moving back to Potawatomi Bingo Casino’s Wild Earth Cucina Italiana, to the happy anticipation of all of the restaurant’s patrons.

Owners of the Potawatomi Bingo Casino expect to begin the Wild Earth operation early in September 2012.  The redecoration of the restaurant as well as the menu will follow an Italian lead.  Certain elements such as the 12-seat private dining room, open kitchen, stone pillars and bar will remain as they were.  Those that are nostalgic and loved the old Wild Earth will have enough of that same warm, country kitchen atmosphere to feel right at home.

However, the new Italian flavor of the restaurant will provide a mouth-watering menu.  Italian-American cooking will create the taste of Wild Earth.  Well-known dishes like spaghetti and meatballs, will be presented alongside gourmet wonders such as flatbread with arugula, pesto, fresh mozzarella, pancetta and shrimp. The call of the casino can be found in the 40 Italian wines, along with cocktails and Italian beers.  The dinner menu will be served from Wednesdays to Sundays.  Many Wild Earth fans are thrilled at the re-opening of their favorite restaurant!
